Zucchini and Herb Fritters

2 pounds of assorted squash, grated

2 garlic cloves, peeled and chopped

3 tablespoons of chopped fresh basil

3 tablespoons of chopped fresh parsley

½ cup crumbled feta cheese

2 eggs, beaten

1 cup dried bread crumbs

1 bunch chopped scallions

Kosher salt and freshly ground pepper

Mix all of the above together and season with salt and pepper.

Heat olive oil in a frying pan and drop the batter by 2 tablespoons at a time. Cook until golden brown and flip. Drain on paper towels and serve immediately. Serves 4.
